Fall Harvest Salad Recipe

As a busy mom who loves to host, I’m always looking for simple and delicious recipes. This fall harvest salad is the only salad I crave all season long! It’s a perfect weeknight staple and also makes a great dinner party dish because it’s easy to pull together and satisfying. Try my take on the fan favorite Sweet Green harvest salad!

Fall Harvest Salad Recipe (serves 4)

  • 2 Bunches of Lacinato Kale- remove stems, chop & massage with good olive oil

  • 1-2 Sweet Potatos- peel and chop, drizzle with olive oil, salt, pepper and toss to coat, preheat your oven to 425 and roast for 25 minutes

  • 2 Honeycrisp Apples- chopped

  • Walnuts- chopped

  • Goat Cheese- crumbled

  • Dried Cranberries

  • Drizzle with your Favorite Vinaigrette (I like the Drench lemon vinaigrette, store bought and good ingredients)

  • Serve with good bread and butter
