Rainbow Greek Salad

My rainbow Greek salad couldn’t be easier and is the perfect recipe for your next girls night or dinner party. No cooking required and comes together in about 10 min. Serve with pita and hummus (I like to toast/warm my pita which you can easily do in a skillet).

Rainbow Greek Salad

-4 Bell Peppers: red, orange, yellow, green, chop in thin slices

-1 Cucumber: slice and half

-1/2 Red Onion: thinly slice

-Pitted Kalamata Olives: half

-1 Container/ Block Feta: crumble or chop

-Arrange on a serving platter in rainbow order with cheese in the middle

-Drizzle with good olive oil and red wine vinegar to taste

-Sprinkle with dried oregano and flaky sea salt to taste

-Squeeze juice of 1 lemon
